Enjoy this healthier take on one of your favorite Girl Scout cookies!

Ingredients

  • 1 large apple
  • ¼ cup unsweetened shredded coconut
  • 3 tbsp peanut butter (or a nut butter alternative)
  • ½ tbsp maple syrup
  • A handful of dark chocolate chips
  • ½ tsp coconut oil

Directions

  1. Cut the apple into thin slices crosswise.
  2. Mix the shredded coconut, almond butter, and maple syrup in a small bowl.
  3. Place the apple slices on parchment paper and spoon the mixture on top of each slice.
  4. Melt the dark chocolate with the coconut oil on the stovetop, then drizzle over each apple slice. Place in the freezer to firm up for about 10–15 minutes. Store any extras in the fridge and enjoy!
