Slow-Cooker Pot Roast with Gold Potatoes & Onions

From the pantry: 2 tbsp vegetable oil, 1 cup beef broth, 3 cloves garlic, minced, 1 tsp dried thyme, Salt and pepper to taste

  1. Pat the roast dry and season it well on all sides with salt and pepper.
  2. Sear in oil over medium-high heat, about 4 minutes a side, until deeply browned.
  3. Pile the potatoes and onion into the slow cooker and set the roast on top.
  4. Whisk the beef broth, ketchup, Dijon, garlic and thyme together and pour it over.
  5. Cover and cook on LOW for 8 hours, or HIGH for 4 1/2. Add the green peppers for the last 45 minutes so they keep some bite.
  6. Rest the roast 10 minutes, pull it into chunks, and spoon the pan juices over everything.

Tip: Sear the roast before it goes in the slow cooker. Those eight minutes of browning are where the flavor comes from.
