How to make it
From the pantry: 2 tbsp vegetable oil, 1 cup beef broth, 3 cloves garlic, minced, 1 tsp dried thyme, Salt and pepper to taste
- Pat the roast dry and season it well on all sides with salt and pepper.
- Sear in oil over medium-high heat, about 4 minutes a side, until deeply browned.
- Pile the potatoes and onion into the slow cooker and set the roast on top.
- Whisk the beef broth, ketchup, Dijon, garlic and thyme together and pour it over.
- Cover and cook on LOW for 8 hours, or HIGH for 4 1/2. Add the green peppers for the last 45 minutes so they keep some bite.
- Rest the roast 10 minutes, pull it into chunks, and spoon the pan juices over everything.
Tip: Sear the roast before it goes in the slow cooker. Those eight minutes of browning are where the flavor comes from.
