Ingredients

  • 1 lb bag of small potatoes or 3 medium potatoes
  • 4-6 eggs
  • 1 bell pepper
  • 1 medium yellow onion
  • 1/2 to 1 lb of your choice of meat (i.e. turkey bacon, bacon, sausage, ham, etc.)
  • 1/2 cup of shredded cheese
  • Olive oil
  • Salt and pepper to taste
  • Any desired toppings (i.e. avocado, hot sauce, other seasonings, etc.)

Directions

  1. Start by dicing the potatoes into small cubes and chop up the onion and bell pepper.
  2. Cook the potatoes by topping them with a drizzle of olive oil, salt, and pepper. Air fry potatoes at 400˚F for 15-20 minutes/until crispy or bake at 400˚F for 45 minutes.
  3. While the potatoes cook, coat a large skillet with olive oil and cook bacon or other meat of choice. You can set meat aside and clean pan of grease if desired.
  4. Once cooked, add eggs, chopped onion and bell peppers, most of the cheese, and seasonings. Add potatoes once the eggs are mostly cooked.
  5. Continue to cook all ingredients over medium heat and add cheese on top for a few more minutes.
  6. Once fully cooked, serve, top with any other desired toppings, and enjoy!
