Cauliflower Santa Fe Chicken Rice Bowl

Ingredients

  • 1 head of cauliflower
  • 2–3 boneless chicken breasts
  • ¾ to 1 cup shredded Mexican cheese blend
  • ½ cup diced red pepper
  • ½ cup black beans
  • ½ cup whole kernel corn
  • ½ cup enchilada sauce
  • Avocado or guacamole, sour cream, ranch (optional, for serving)

Directions

Cauliflower Rice:
  1. Chop the cauliflower into small pieces and transfer to a food processor. Pulse until it reaches a rice-like texture.
  2. Transfer the cauliflower rice to a skillet over medium heat. Cook until slightly browned and warmed through.
  3. Add any desired seasonings.
For the Rest of the Bowl:
  1. Dice the chicken breasts and cook them in a skillet over medium heat. While the chicken is cooking, chop the red pepper.
  2. Once the chicken is cooked through, add the enchilada or taco sauce, chopped red pepper, black beans, corn, and any desired seasonings. Simmer for a few minutes, then stir in the shredded cheese.
  3. Serve the chicken and vegetable mixture over the cauliflower rice, or mix everything together before plating.
  4. Top with your desired sides or toppings such as avocado, ranch, or sour cream. Enjoy!
