Chocolate Strawberry Banana Bread
Ingredients
3 overripe bananas, mashed
4 tbsp unsalted butter, melted
1/4 cup Greek yogurt
1/2 cup brown sugar
1/4 cup granulated sugar
1 large egg
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/3 cup cocoa powder
1 tsp baking soda
1 tsp cinnamon
1/2 cup chocolate chips (plus additional for topping)
1/3 cup chopped strawberries (plus additional for topping)
Dash of salt
Directions
Preheat your oven to 375˚F and grease and line a bread loaf pan with parchment paper.
In a large bowl, mash your bananas until smooth. Add melted butter and Greek yogurt to the bananas and mix.
Next, stir in your egg and vanilla extract. Once combined, add both your brown and granulated sugar, mixing until smooth.
Fold in the flour, cocoa powder, baking soda, cinnamon, and a dash of salt — making sure not to overmix.
Fold in the chocolate chips and chopped strawberries.
Now that your batter is prepared, pour it into your pan and top with extra chocolate chips and chopped strawberries.
Bake for 35-40 minutes, or until a butter knife inserted into the center comes out mostly clean.
After baking, let the loaf cool in the pan for 10-15 minutes before transferring to a wire rack or plate to finish cooling.
