Frozen S’mores

Ingredients

  • 1 box of graham crackers
  • 1 box of Instant Chocolate Pudding Mix or chocolate ice cream
  • Whole or 2% milk (as required for the pudding mix)
  • Marshmallow creme
  • ½ tub of Cool Whip (thawed)
  • 3 oz cream cheese

Directions

  1. Line a 9x13 pan with parchment paper and place 12 graham cracker halves on the bottom. Other pan sizes can be used to fit more or fewer graham cracker squares.
  2. Mix the milk and chocolate pudding mix. Add ½ cup of Cool Whip to help the pudding freeze better. Using a spoon, spread the chocolate pudding over the layer of graham crackers. Place in the freezer to set. (You can substitute chocolate pudding with chocolate ice cream; milk is not needed in that case.)
  3. Beat the cream cheese and marshmallow creme together until smooth. Add the remaining Cool Whip and spread this mixture over the chocolate layer.
  4. Top with another layer of graham crackers. Cover the pan and freeze for 5–6 hours or until firm.
  5. When ready to serve, remove the pan from the freezer and let it sit at room temperature for 5–10 minutes. Use the parchment paper to lift the s’mores from the pan, then cut into squares on a cutting board. Serve immediately or refreeze for later.
