Garlic Steak Bites

Ingredients

  • 1 lb sirloin steak, cubed
  • 1 lb Yukon gold potatoes, cubed
  • ¼ cup butter or ghee
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp black pepper
  • 1 tsp salt

Directions

  1. Over medium heat, prep a large skillet with olive oil and two tbsp of ghee or butter.
  2. Once the ghee or butter is melted, add small cubes of potatoes with a sprinkle of garlic, oregano, thyme, and salt. Make sure to not overcrowd the potatoes in the pan. Cook 2–3 minutes before stirring and allow around 8–10 minutes for the potatoes to become fork tender/golden brown. (Note: the larger your potato cubes, the longer they will take to cook). Remove from pan once cooked.
  3. Increase your heat and add remaining ghee or butter to the pan. Once melted, add cubed steak pieces and season with a sprinkle of garlic, salt, and pepper.
  4. Ensure the first side of the steak pieces gets seared well before stirring. Cook until golden brown or they have reached an internal temperature of 145˚F.
  5. Add your potatoes back into the pan once everything is cooked and add desired seasonings to top off the dish. Pair with a delicious grilled vegetable like asparagus or broccoli to create a complete and nutritionally balanced plate.
