Ingredients

  • 1 1/2 to 2 lbs of 80% lean ground beef
  • 1 medium sweet yellow onion, diced or sliced
  • 1 cup of sharp cheddar cheese, sliced or shredded
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 brioche buns
  • Your favorite BBQ sauce
  • Drizzle of olive oil

Directions

  1. In a large skillet, drizzle olive oil and cook diced or sliced onions over medium heat for 8–10 minutes or until golden brown. Once cooked, remove and transfer to a plate.
  2. Next, lay down a sheet of parchment paper on a flat surface and divide your beef into 8 equal portions and shape them into balls. Top with another sheet of parchment paper and use a flat-bottomed pan to press the beef into patties.
  3. On half of the patties, top with 1/8 cup shredded cheese (or a few small slices), a tablespoon of the onions, and another 1/8 cup of cheese — making sure to leave a border around the patty. Top each with another thin patty and press the edges together, sealing well. Double check to make sure there are no holes — this is important so the cheese doesn’t leak out while cooking.
  4. In the same large skillet, add a drizzle of olive oil and heat over medium heat. Add burgers to the pan, leaving space to flip them carefully. Cook for approximately 8 minutes before flipping, or until browned on one side. Once flipped, cook for another 5 minutes or until golden brown. Double check that they have reached an internal temperature of 155˚F.
  5. After cooking is done, assemble burgers on brioche buns with additional caramelized onions and BBQ sauce.
