Ingredients

  • 1 marinated chicken breast or 2 thighs
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp oregano
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ cup of cooked brown rice or quinoa
  • ½ cup diced cucumber
  • ¼ cup Kalamata olives
  • ¼ cup feta cheese
  • ¼ cup tzatziki sauce
  • Hummus optional

Directions

  1. Start by combining olive oil, lemon juice, garlic powder, oregano, cumin, and paprika into a small bowl to make the marinade for the chicken (if making for multiple people, adjust each ingredient amount based on the number of people/chicken breasts).
  2. Marinate the chicken in a Ziplock bag with the marinade. Leave it in the fridge for 30 minutes to an hour. Pro tip: poke holes in the chicken breast with a fork for better marination.
  3. Preheat the oven to 350˚F. Once preheated, cook the chicken for 20–30 minutes, making sure it reaches an internal temperature of 165˚F.
  4. While the chicken cooks, prepare the rice according to the package instructions, chop the cucumber, and prep the remaining ingredients.
  5. Once all ingredients are ready, place the rice at the bottom of the bowl and top with the chicken, cucumbers, olives, feta cheese, hummus (if desired), and tzatziki sauce.
