Avocado Chickpea Salad

Ingredients

  • 1 large avocado, diced
  • 9 oz chickpeas, drained and rinsed
  • 1/2 cucumber
  • 2 tbsp olive oil
  • 1/4 cup feta cheese, crumbled
  • 3 tbsp lemon juice
  • 1/3 cup parsley
  • 1 red onion, chopped
  • Salt
  • Black pepper

Directions

  1. In a large mixing bowl, add the diced avocado, cucumber, red onion, parsley, crumbled feta cheese, and chickpeas.
  2. Pour the olive oil and lemon juice over the mixture, then add salt and black pepper to taste.
  3. Stir to combine the ingredients evenly, then serve.
