Greek Yogurt Blueberry Pancakes

Ingredients

    Makes 4 Medium Pancakes
  • 1/3 cup whole wheat flour
  • ½ cup Greek yogurt
  • ½ banana, mashed
  • ½ cup fresh or frozen blueberries
  • 1 large egg
  • 1 tbsp maple syrup
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1 scoop vanilla protein powder (optional)
  • 1 tbsp peanut butter, melted (optional)

Directions

  1. In a small bowl, mash your banana. Then add Greek yogurt, egg, vanilla extract, and maple syrup and mix until you reach a smooth consistency.
  2. Next, add and mix in flour, protein powder, and baking powder.
  3. Finally mix in blueberries to finish the pancake batter.
  4. On a flat pan over medium heat, add pancake batter. Flip once small bubbles start to form in the batter. Cook both sides until they are golden brown.
  5. Once cooked, stack and top with peanut butter drizzle and additional blueberries if desired.
